It seems that since quarantine started, we’ve been all obsessing over tiger breeders and cake recipes. Nothing wrong with a rich-double-chocolate-cake as a midnight snack. However, if you are looking for a healthier but still sweet option, here is a delicious peanut cup recipe.

We chose this snack because it has a high protein content and they taste so blooming fantastic!

They are so easy to make and require no cooking, just a brief stint in the freezer. They keep for around a week in the fridge and you can top them with whatever chocolate takes your fancy, I know a lot of clean eaters like to stick with dark so that is absolutely fine!

What you need to make six fingers:

·       140g Smooth Peanut Butter

·       2 tbsp Honey

·       1.5 scoops of protein powder (I used Pure Nutrition Whey)

·       40g Oat Flour (you can make this by putting oats in to a food blender until it becomes a flour consistency)

·       50g Milk, Dark, White or plain chocolate)

Put your peanut butter and honey in a bowl and mix well.

Add your oat flour and mix well again.

Add the protein powder and use your hands to mould into a dough (if it is sticky add a little bit more flour)

Cover your container with tin foil and then press the dough into the container.

Pop the container in  the freezer for 30 minutes and then remove the foil (as it will be nice and hard)

Melt your chocolate in the microwave, I went for 90 seconds at 750 wats then stirred out any chunks so it was smooth.

Cut your hard dough in to finger like strips, you can cut them as thickly or thinly as you like.

Use a spoon so drizzle the melted chocolate over the bars.

Once finished either serve or pop them in an airtight container in the fridge.
